Products Description

Distilled monoglyceride (DMG) is a commonly used ice cream stabilizer to improve its texture, prevent ice crystal formation, and enhance the overall quality and shelf life of the product.

DMG is a type of emulsifier derived from the hydrogenation of vegetable oils. It is composed of a mixture of mono- and diglycerides, with the monoglycerides being the predominant component. These molecules have hydrophilic (water-attracting) and hydrophobic (fat-attracting) properties, which allow them to interact with both water and fat in the ice cream mixture.

When added to ice cream, DMG acts as an emulsifier by reducing the surface tension between the fat and water components. This helps to create a stable emulsion, preventing the separation of fat and water during freezing and storage. By maintaining a homogeneous mixture, DMG contributes to a smoother texture and creamier mouthfeel in the finished ice cream.

DMG helps to inhibit ice crystal formation by interfering with the growth of ice crystals during freezing. This results in a finer and more uniform distribution of ice crystals, which enhances the smoothness of the ice cream.

In addition, DMG can improve the stability of the foam structure in ice cream, allowing for better overrun (the amount of air incorporated into the ice cream during the freezing process). This helps to create a lighter and more aerated product.
